Ingredients
- 2 large cucumbers, 🥒 peeled and chopped
- 1 cup freshly squeezed lemon juice (about 4-6 lemons) 🍋
-1 pinky of fresh ginger 🫚
- 1/2 cup honey 🍯
- 4 cups cold water 💦
- Ice cubes 🧊
- Lemon slices and cucumber slices, for garnish
- Fresh mint leaves, for garnish (optional)
Preparation
1. In a blender, combine the chopped cucumbers; ginger, and 1 cup of cold water. Blend until smooth.
2. Strain the cucumber & ginger mixture through a fine mesh sieve into a large pitcher, pressing down to extract as much liquid as possible. Discard the solids.
3. Add the freshly squeezed lemon juice and honey to the pitcher. Stir well until the honey is fully dissolved.
4. Add the remaining 3 cups of cold water to the pitcher and stir to combine.
5. Taste and adjust sweetness just enough to take away tart taste adding honey 🍯 if needed
6. Refrigerate the cucumber Ginger lemonade for at least 1 hour to chill and allow the flavors to meld.
7. Serve over ice cubes, garnished with lemon slices, cucumber slices, and fresh mint leaves if desired.
